Race to the Heart of the Circular Economy at EcoSchools Conference

As part of this year's EcoSchool's Super Conference, we played the Race to the Heart of the Circular Economy with both youth and educators. We all learned a lot about circular economy thinking and how in ecology, nature has a use for everything that it produces. We're learning to apply this to our food system so every part of every product and by-product has a use and no food gets wasted.

Rescuing Food Scraps from Home

As part of the STEM workshops and Queen Victoria School in Toronto, we made meals out of all kinds of rescued food. Berry compost out of wrinkly apples and soft wilted berries served on crepes. Coleslaw out of carrot and lettuce ends, and a stirfry out of broccoli stems and wilted veggies!
